When I am in a phase of really dialing in my diet, I don’t do a lot of variety.

Cajun Chicken Salad
(210 calories – 28g protein – 8g carbs – 12g fats)
INGREDIENTS:
— 4oz Cajun Chicken, thin strips
— 1 Big handful Spinach
— 1 Big handful Kale, wilted
— 2 Spring Onions
— 2 tbsp Chili Lime Dip
DIRECTIONS:
— In a hot pan add in your chicken with some oil and cook for 4-5 minutes until crispy.
— While your chicken is cooking, in a medium heated pan add your spinach, kale then season with black pepper and sea salt. Cook for 1½ minutes to simply generate a bit of heat and bring the flavours out.
— Once they are both ready plate up your salad and pour your chicken on top along with your dressing. Serve immediately.
